Charles Grech, one of Malta’s leading Wine, Spirits & Tobacco merchants entered the food business in the last few years and opened the Bistro in Dingli Street Sliema, which today is probably the most talked about restaurant in the neighbourhood. This is not just because of its excellent food and service; the warm ambiance combined with its classic design, good taste and high quality finishes create a sophisticated atmosphere in an informal setting which accurately reflects the culture of the parent company.
With a view to keeping the Bistro at the very top end of the informal eating market MHCS were called in to monitor and where possible improve performance through mystery visits; they were later contracted to provide consultancy to cover the general needs of the restaurant. Monthly visits interspersed with 2 mystery visits became an important feature to fine tune the operation and the resulting communication with the senior team allowed them to develop a fuller understanding of the strengths and weaknesses of the operation.
Before long their attention had turned to cost awareness and control measures. Communication, which became the subject of a Workshop funded by the EU led to a much closer working relationship between the Bistro management and head office and had an immediate impact on the operation.
Any person familiar with restaurant operations will know that several plugs, levers, checks and balances have to be in place and compatible with one another before an operation is firing on all pistons. By taking corrective actions as the Bistro did, a sense of ownership was instilled in the team which resulted in tangible results on teamwork , effective decision making given the implementation of the right tools and necessary skill set which resulted in better bottom line performance.
